- ⅓ cup unsweetened applesauce
- 2 eggs at room temperature
- ¾ cup unsweetened vanilla almond milk (or milk of choice)

1 tablespoon apple cider vinegar (We use Vermont Village Apple Cider Vinegar!)
- ⅓ cup melted coconut oil (or melted butter or vegan butter)
- ½ cup raisins
- ¾ cup fresh or frozen blueberries
- ½ cup chopped walnuts or pecans
