Potato Sausage Breakfast Thing!

Ingredients

6 medium to small potatoes - I do not peel

3 cups cooked sausage (your choice of type)

6 pinches of salt and pepper

10 large eggs
-
¼ cup water
-
1 ½ cups of shredded Mexican cheese
-
Wood's Maple Syrup - you choose
Directions
Boil the potatoes whole until cooked through.
Preheat the oven to 350°F.
With your whisk the eggs and water. Set aside.
Drain the potatoes when they are done. Place one potato in each popover cup and mash down.
Sprinkle each potato with a pinch of salt and pepper.
Cover each potato with ½ cup of cooked sausage.
Pour ½ cup of whisked eggs over the sausage.
Sprinkle each one with the shredded cheese.
Bake at 350° F for 20 min until the egg has set up and cooked through.
